Amatriciana (or Alla Matriciana) refers to a type of sauce for pasta. It is made with tomato paste, bacon, onion, garlic and few more things. It is one the famous Italian sauces from Rome.

E.g. in Rome just one favourite is Pasta all'amatriciana /amatriˈtʃaːna/ (sugo all'amatriciana is the sauce which dresses the Amatriciana pasta), but in Milan it is Risotto alla milanese (a yellow saffron rice). the cousine in lazion is very good. you can taste very good pasta like: GRICIA, or AMATRICIANA or CARBONARA or CACIO E PEPE. If you like you can have "carciofi alla giudia" hartichoke fried, o "carciofi alla romana" with mint. if you want a very good meat ask coda alla vaccinare. all is very good but just stay away from turistic place. enjoy
