The mashing of a potato, simple process that it is, probably dates from antiquity, leaving us no record of the original masher of the potato. Modern instant mashed potatoes, though, does have an inventor, Canadian scientist Edward Asselbergs. In 1962 he was issued a patent for an industrial method of "Preparation of dehydrated cooked mashed potato." (Older processes were also developed and patented in 1954 and 1912, and ancient civilizations were known to dry and grind various vegetables for preservation.)
