The purpose of pasteurizing wine is to:

Pasteurizing can make a sweet wine or dry wine at any stage, without waiting months for fermentation to completely use up all the available sugar.

Once pasteurized, the dead yeast will quickly settle to the bottom and then the wine can be racked off in several days.
