they only sink in the middle if thge oven door is open in the middle of the baking procedure

Moisture leaves the cake, and the ingredients turn form liquid to solid. As moisture and steam / hot air leave the cake, it can shrink a little.

The cake is not bound together strongly with ingredients. Upon applying pressure or breaking it, the bonda do not hold and the cake becomes weaker. The added fruits and / or nuts in the cake also make it weaker, as they cause gaps with no support for the cake to hold together with.
Apparently if you toss them in a little of the flour before you add them in, then they don't sink. My mother always taught me to simply add them with the flour, though (:
