The answer to this question depends upon which fruit you are talking about and whether you are the harvester, shipper, grocery store or consumer. Let's guess you are the consumer. . . .

  • Buy only enough fruit to last for a few days
  • All cut fruit should be kept refrigerated since they would be considered potentially hazardous.
  • Whole fruits like apples, Pears and Oranges can generally be stored unrefrigerated for a couple days, but refrigerate them if you want them to last longer. I like pears softer, so I let them ripen a couple days at room temperature, then refrigerate.
  • Bananas are generally not refrigerated. If my bunch ripens too fast, I peel and freeze them for smoothies.
  • Softer and smaller fruits, like strawberries, raspberries, blackberries and grapes are usually kept refrigerated. Even refrigerated, they can mold in a couple days - but sometimes that is because they are old by the time they get to your store.
  • Stone fruits, like peaches, plums and nectarines, will not ripen under refrigeration. I allow mine to ripen at room temperature, then refrigerate to keep them for a few more days.
