Two good wines that would go well with cod are either a Pinot Gris or a bottle of Sauvignon Blanc.
Bake a cod fish filet at 400°F (200°C) for about 12-15 minutes, depending on the thickness of the filet. The fish is done when it flakes easily with a fork and has an opaque appearance. Any New Zealand Sav. Blanc. Great acid fresh fruit good price around 9-15 dollars. Another choice might be a vinho verde from Portugal available at Trader Joe's for about four dollars. Hard to believe that such an inexpensive wine could be so good.

Cod franciscan is baked (usually) cod filet covered and baked in a tomato based sauce consisting of diced peppers, onions and olives. Has a very rich, deep tomato flavor while still retaining a nice fishy undertone. Might remind one of Manhattan Clam Chowder on a plate... at least that sort of flavor combo.
