because The "eyes" of the potatoes are buds that grow into new plants.

When planting potatoes, it is recommended to plant them with the eyes facing up. This helps the potato sprout and grow properly.
Seed potatoes can be stored for up to 2-3 months before planting them to ensure they remain healthy and viable for growth.
You cut a piece of the potato that contains 1-2 eyes. Usually this is done using left over storage potatoes that have begun spouting at the beginning of planting season in spring. These potatoes would have already been cured after the fall harvest and stored in a dark place with a temperature of 40degrees to prevent spoilage and sprouting till spring. The problem with potatoes bought from the supermarket is that unless it is already planting season they will rot by the time you need them.
Potatoes are tubers. Each have "eyes". If you cut the tuber up so that each segment has an eye and plant it, a new plant will grow with several tubers growing underground. "Seed" potatoes have many eyes on the tuber.
These are actually shoots, not roots. If you plant these potatoes in the ground, preferably shoot side up (don't worry, they will find their own way up if you get them upsidedown), the shoots will emerge from the ground and form leaves. Meanwhile, roots will form on the underside of the potato, and eventually new potatoes will be borne as tubers on the roots near the crown. Sooooo...you can turn each of those potatoes into several potatoes!!! Or you can just pick off the shoots and eat the potatoes instead of planting them, it is up to you :)
To ensure successful growth when planting red potatoes in your garden, follow these steps: Choose a sunny location with well-draining soil, plant the potatoes in rows or mounds, keep the soil consistently moist but not waterlogged, fertilize with a balanced fertilizer, and hill up soil around the plants as they grow to encourage more tuber development. Harvest the potatoes when the plants start to die back.

You dig a trench about 4-5 inches deep, then cut up the potatoes so there is about 2 eyes on each piece. Then you place them in the trench 1 ft apart with the eyes up. Lastly, cover them up. I hope this helps you.
eyes, beak, nose holes and feathers.
Straight up potatoes. It's just potatoes and that's it. Straight up.
Yes. Potatoes are tubers and make eyes which are the seeds of the potato. If you've ever had a potato that started to turn soft, or was stored too long, you've probably seen the little growths that grow on the outside of the potato. These are the eyes. If you cut the potato into pieces, with an eye on each piece, you could plant them, six inches deep and one foot apart. Many people dry the pieces before planting. Dry with the eye down and potato flesh up to hasten drying. A plant will hopefully come up from each eye. The potatoes will grow on the roots of the plant. Unlike many other vegetables, potatoes grow up, so you must keep the potatoes covered by raking soil around the outside of the plant, forming a mound around the plant. When the tops of the plant begin to wilt, it's time to check the potatoes. Dig carefully into the mound and remove your potatoes. If too small, you can wait a little longer and check again when the plants die.Potatoes like loose, well drained soil. You can also grow them in a large pail or bucket. The biggest pests are potato beetles, which can be picked off and stepped on. Before planting, unless you have very good soil, you need to mix a little fertilizer into the soil (I use organic mulch). The plants also do well with just a pinch of Epsom salts sprinkled around the plant when it starts to come up through the soil.
