The properties of the flour will vary depending on how it was made (were the sweet potatoes raw or cooked before being dried and ground into flour.) NASA is even doing studies on bread made with between 50% and 65% sweet potato flour and whole wheet flour since sweet potatoes are a likely cantidate for growing in space.
