As far as I've ever found venison (deer) is highest in nutrition and among lowest in fat calories. I'm partial to backstrap cut into steak and the tenderloin steak with scrambled eggs (chicken duck or goose eggs, goose are higher in protein but i don't know where to buy them) Hind quarter is more for grinding but parts of it can me made into steak. Bear is also high in protein but it's harder to come by where I live.
