Endermen become hostile when you make direct eye contact with them, which occurs if you don't have a pumpkin on your head. There is no reason they get mad, they just do. They will attack you when you blink at them. If you look at them through a transparent block or wear a pumpkin on your head they won't be provoked.
You can grow pumpkins which can be used to make pie (suger, egg, and pumpkin), and can be used to make jack o lanterns which are glowing pumpkins that can be placed underwater (pumpkin and torch) and you can also wear then on you head to prevent endermen from attacking you (however it provides no protection from damage).
You cannot tame an Enderman in Minecraft. If you don't look at them, they will not attack you though. If you wear a Pumpkin on your head, they will not attack you, regardless if you look at them. But be warned, if you hit them, they will attack you.

It is a costume change that can be triggered (and reversed!) by typing the costumizer command : Ctrl +Shift +P (all at once). This does not work as a costume on the island. You have to find the mask on the scarecrow and wear it.
