You don't 'defend with' a monster in Yu-Gi-Oh, like you do in Magic the Gathering. The attacking player is the one who chooses what his monster battles against. The defending player does not get a choice in this, he is not able to switch the attack target, unless he has an effect that lets him do so.

If you choose to activate the effect of D.D. Warrior Lady, both monsters will be removed from play. This is because the effect of Kelbek is mandatory and will activate first in the chain. The player controlling D.D. Warrior Lady then has the choice of activating her effect. When the chain resolves, D.D. Warrior Lady will banish both monsters and the effect of Kelbek will disappear since D.D. Warrior Lady is gone.
No, not at all. When the defending player summons a monster after an attack has been declared, a 'replay' occurs. The attacking monster has to choose whether to continue its attack or discontinue it altogether and forfeit its attack that turn. If it continues the attack, it can be against a different target. If the monster was making a direct attack, and a stronger monster was summoned, then the attacker will most likely discontinue his attack. He can't continue as a direct attack, but is not forced to attack the newly summoned monster either.
