Gandalf tried to protect everyone. He considered himself the steward of Middle-earth. Pippin in particular needed his help after looking in the palantir of Orthanc. By taking Pippin to Gondor he put him in the greatest citadel the enemies of Sauron had. It was also a way for Gandalf to keep an eye on him to see if there were any lasting effects of Pippin's ordeal with the stone.
