well if you mean the battle during the deathly hallows in my opinion professor McGonagall took charge of Hogwarts during the battle because Harry had to find the Horcrux while McGonagall kept Harry from the death Eater and rallied the teachers to fight while organising prefects to take all student under the age of 17 to saftey.

George gets his ear cursed off at the start of the last book by Severus Snape. He was one of the 7 Harry Potters being transported that night to safety. Fred dies at the end of the same book at the Battle of Hogwarts (the great battle where good and evil fight also the last fight between Harry Potter and Voldemort) . :(
