Due to the way Pokemon work, they gain 127 stat points based on what they battle. If a Pokemon is levelled up entirely through rare candies, since it has battled nothing, it will not gain any of those points.
However giving rare candies to a Pokemon who has battled a lot, will not harm its stat progression in any way. Basically the first 80 or so battles will determine where those bonus points go, even though it may not actually receive the points until later levels.
