Really there isn't much to beating Karen. The first time, you will want to bring some Fighting types at least level 45. Machoke/Machamp, Primeape, and either of the Tyrogue evolutions would all be great choices for her Dark types. But bring an Electric type for Murkrow. The second time, Karen is a lot tougher, including her new level 60's. She has Spiritomb. There is really no way to get an advantage over Spiritomb, just a really good attack and high levels.
