It really depends on what one you like. I think that umbreon is kinda useless because it cant learn very good moves even though it has great stats. Tms work good. Jolteon learns a variety of moves that strike multiple times like double kick, pin missle, and spike cannon. It doesn't learn thunder but does learn zap cannon which is also a good move. If you like double battles I'd recommend glaceon or mabey leafeon. they learn moves like icy wind which can lower speed, or the high crit. hit rate move razor leaf. vaporeon is good for strategic battles and so is flareon. they both have some decent water/ fire moves and are fast and fairly strong special attack and defence wise. flareon also has an array of moves for stat or multiple turn effects like smog, willow wisp, smokescreen, and fire spin. If you choose espeon it has great stats but doesn't learn great moves although it does learn some good ones later on. Other wise You could go off of type or which is easier to get. Of course you could always stick to the basics or better yet find or trade for a ditto or female eeve.

Here's a good example; Evee; a Pokemon with 7 different evolutions, each which are different types of Pokemon. If you level Evee to a Vaporeon, the water evolution of a Evee, when the Evee is level 100, Vaporeon WON'T learn any water moves, unless you give it a TM or HM water moves. Why? Because Evee is a normal Pokemon, which won't learn any water moves when leveled up. Same goes to the rest of Evee's 6 evolution. Glad to help and correct that guy C;
