I don't think you can get Gardenia back to the gym after you beat the game, but you can still battle her. If you've discovered the Survival Area, you might know what I mean. After you get admission in to the Battleground (by helping Buck), you go in and all the Gym leaders are come there, just not all at once! I believe they change out Gym leaders each day. So if that's what you want....
