The crest is a version of an old symbol called a "flamel". The flamel, in it's historic version, was a snake pinned to a cross. Author Hiromu Arakawa adapted the symbol for its use in FullMetal Alchemist. It's the symbol of Nickolas Flamel, who was the alchemist that we link to the Philosopher's Stone nowadays (In things such as Harry Potter or FMA). I guessing that Ed wears the crest because it symbolizes his search for the Philosoper's Stone, even if the term or name "Flamel" don't ever show up in the Manga or Anime. Hope it helps!
