Eyes are really important in Japan. I've heard of them as defined as a way to see the soul. Also if you look at anime characters they are tall, light skinned, large eyed, and usually if female very well endowed. Have you ever seen a Japanese person who fits those? Nope. American's are the wide eyes. Basically, Japanese Anime characters are basically Americans drawn by Japanese and are just assumed as Japanese although they have very little Japanese traits.
