US Army surgeon William Beaumont (1785-1853) was a pioneer in the modern study of human digestion. Much of his work was with fur company employee Alexis St. Martin (1802-1880) who survived a gunshot wound to the stomach and suffered a permanent fistula, or opening, to the exterior of his torso.
