You can catch more than one shiny in the games. Any Pokémon that you find with the Pokéradar (which you get when you complete the Sinnoh Dex, from Professor Rowan in his lab), or if you manage to get lucky and come across one at random (1/8192 chance per encounter). For the Pokéradar, use it in a large enough patch of grass that you can chain together a bunch of Pokémon (Chaining means finding a Pokémon, killing one, or catching it, and going to far away grass patches that shake you have a greater chance of catching one) if a thing of grass shakes, AND sparkles (or double sparkles) there's a very good chance to get a shiny.

Another method is breeding. While breeding normally also has a 1/8192 chance per egg, if you breed Pokémon from two regions together (like an English Seaking and a Japanese Ditto), the chances rise to 1/2048 per egg. This international breeding is known as the "Masuda Method."
