Many chemical reactions are dependent on the temperature and heat provided. The rate at which the reaction occurs is directly proportional to the temperature.

At the atomic level, atoms are excited and are in motion in presence of high temperature. Higher the temperature, the more energy these atoms have. The more energy they have, the easier it is for them to break their present bonds, and react.

Thus on reducing the temperatures, the rate at which the chemical reaction occurs is reduced. It increases the time taken for the same reaction to occur otherwise, and the reaction itself is more controllable.
