It depends on the type of apple, the temperature and humidity level where they are stored, and whether it has been cut or bitten (or otherwise compromised). Usually, apples will start to get softer in a week, but they don't typically rot or mold (without some harm to the skin) for at least two weeks, and usually more like a month. If they are refrigerated, they can last two months.

However, if they are cut or sliced, they won't stay good more than about 4-5 days.

It takes a while for fungus to grow on an apple, the apple will ripen and decay/decompose. Of course if you are wondering how long the apples you buy at the store will stay fresh, this depends on how ripe the apple the manufacturer picked was, and how long it sat in a store. In general the span of a grocery store apple is at least two weeks before you start really noticing decay.
