The process of evolution is in it's definition.

Evolution is the change in allele frequency over time in a population of organisms.

Organisms are selected based on their reproductive success and this changes the alleles in the populations gene pool over time and this is the process of evolution. Change over time. That simple.

Natural selection is one of the ways evolution occurs. Natural selection happens as a result of seemingly insignificant, random, genetic changes. Tiny genetic changes might give a living organism (such as a plant or animal) a slight advantage over others within their species, thus improving the chances that it will procreate, and thus pass along the new trait. (Example: a new trait might allow a desert-dwelling lizard to withstand greater heat, or go longer without water; a genetic change might make a giraffe slightly taller, thus enabling it able to pluck leaves from taller trees; etc.)

Evolutionary theory is about the environment selecting for the fittest. The term fittest doesn't mean the strongest but for the genes that will give a species the best chance to develop and reproduce in a certain place. Some people who live high in a mountainous region are able to work there and not get 'winded' because they have a gene that allows that. Some of us, have lighter skin because we live in an place that requires that the body gets vitamin D from sunlight. People with dark skin don't do as well in that area. But they do better in places with a lot of sunlight and their darker skin prevents sun burn as well as skin cancer.
