  • top: yeast floats on top of vat
  • bottom: yeast sinks to bottom of vat
  • warm: yeast is most active at room temperature, so vat is not cooled - warm brewed beers and ales are best when served at room temperature (british ales are warm brewed)
  • cold: yeast is most active at low temperature, so vat is kept cold - cold brewed beers and ales are best when served refrigerated (lager beers are cold brewed)
  • alcohol: converts sugars to alcohol, performed mostly by yeast
  • acidic: converts sugars and/or alcohol to a variety of acids (e.g. acetic, lactic), performed mostly by bacteria - if yeast can get alcohol level high enough fast enough it kills bacteria preventing this
