Metals expand when heated and contract when cooled. Different metals expand & contract by different amounts. Rivet together a metal that changes a lot to another metal that doesen't change as much. Then when they are expanding/contracting the composite strip ends up bending up/down. They can actually bend quite a lot and can easily be used to trigger an on/off switch.
