You would obviously record your observations in the first part of the scientific method i.e titled commonly as "Observation". Because only after recording your observation you can move onto the second part of scientific method i.e "Questioning".

In scientific method, hypothesis is the scientific prediction the scientist does. He/she gives an educated guess as to what's going to happen during the experiment then would say if its been proven or not at the conclusion.
The scientific method requires reproducibility. I would not think you could skip or rearrange any steps. You need to do the same things in the same order to arrive at the same resolution for the scientific method to be properly applied.
That would be a positivist approach, using numerical, quantitative data - scientific The unscientific would be the opposite.
A psychologist would use the scientific method to test a theory, just as any other scientist would.
