Maizena is a brand of Cornstarch, or cornflour
Maizena is the French word for cornstarch (which is the same as cornflour). Some other European countries call cornflour "maizena" too.
Maizena is a type of cornstarch that is commonly used as a thickening agent in cooking and baking. It is often used in sauces, soups, and desserts to create a creamy texture. Maizena can also be used as a substitute for flour in gluten-free recipes.
Maizena (cornflour) enhances the crumblyness of shortbread - since it is gluten free, it mixes in with wheatflour and disrupts the gluten bonds which would otherwise form. However, many (if not most) shortbread recipes do not require the use of maizena. It's a modern addition which makes the baking of shortbread easier, since it covers up mistakes caused by overworking the dough.
No they are different. Maizena is cornstarch while maize meal is corn meal. Cornstarch is usually used as a thickener while corn meal is used as part of a breading mixture to make it crispier or as an ingredient to make corn cakes.muffins.
Maizena, which is a brand of cornstarch, is gluten-free as it is made from corn. However, it's essential to check the packaging for any potential cross-contamination if you have celiac disease or a severe gluten intolerance. Generally, pure cornstarch does not contain gluten.
Maizena is quite dense. About 250 gm in one cup.
Corn starch in Spanish is called Maizena. Maizena is the brand name of the cornflour.....but the literal translation for corn starch in Spanish is harina fina de maiz
If you are talking about the bechamel that covers the lasagna. (white cheesy stuff) its actually quite simple, heat some butter in a pan. wait for the water to evaporate (bubbles go away) then add some flower, little by little, keep stirring, and keep it at low heat. the flower MUST not bake. but simply brown a bit. i simply use white wheat flower. but i think you can use any grain. dont use maizena or riceflowers. keep adding flower until you get a thick mixture. (like pancake batter) add some milk. about 1:1. stir a bit, and add the grate cheese. keep at low heat til the sauce thickens, and the cheese has melted. at no time during the process is the pan supposed to get too hot, using an au bain marie is best.

The drinks are hot chocolate or "atole" (which is a drink made of milk and corn powder (maizena), sweetened with caramel, rum or different flavors) There is a special gift inside the "rosca" which is a small white baby doll. According to the legend, the person that by luck receives the piece of bread with the doll, will receive fortune from the kings all year long, there for, according to the tradition this person has to give the other unfortunates a feast of "tamales" 2 weeks later. tamales in Mexico, are a corn dough filled with different ingredients, some are with chicken, son with chilies, some with mole. they are covered with the shell or the corn, in different countries and even different Mexico areas, instead of using corn shells, they use banana plant leafs, which gives the tamales a complete different flavor. in this feast they usually serve both types of tamales. this are some visual references: http://www.laeconomia.com.mx/wp-content/uploads/rosca-de-Reyes.jpg http://r.b5z.net/i/u/10054600/i/rosca.jpg http://www.visitingmexico.com.mx/blog/wp-content/uploads/tamales777777777777.jpg http://www.quebonitacolombia.com/images/Alicia.estefan22_Tamales1_16837.jpg BTW if you have ever watch the movie "collateral" with "tom cruise", you might remember a scene with "javier bardem", he tells a story about how xmas is celebrated in Mexico, about a shoe with chalk, and Pedro el negro, that's a complete lie, that is a Dutch tradition, that almost nobody knows in latinamerica. hope my answer clarified you question :)
