There are 3 reason they change color. 1. it's a female 2. fish color is not strong genetically and the color they put on and in fish is getting discolor.
There are 3types of original parrot fish, dark yellow, bright orange & pale orangee red with grey backand red at the belly.
Dark yellow - lowest grade color (usually will be dyed with reddish purple to produce a grade purple parrot) will lose color if put under sun/uv
Bright orange-highiest color grade, natural color will not lose color no matter how, but look ugly when young
Pale orangee red with grey backand red at the belly.- usually is female & change into darker color when put in pairs or with few fish
Few other types which are unicorn, domino-stripe & lumpy head type but only selling like hot cakes in Asia.

I think you are mistaking the orange color for brown. The orange do really look like brown on normal capes. Anyways, mix red dye with yellow dye for orange dye. When you use the orange dye on a normal cape, you will get your " brown" cape.

I believe that what you're thinking of is a grapefruit. Yes, the blood orange can be purple in color inside. It is a less popular fruit than it's more well known navel cousin. The blood orange is an older species of fruit than the navel orange.
