Gluten is basically a form of protein that is found in wheat, barley and rye. Since it is found in cereal, it is pretty much present in different types of breads as well. Gluten is usually removed from wheat flour by rinsing the bread dough and then kneading it till all of the starch is removed. Gluten essentially provides the elasticity and stickiness to the bread or dough, thus giving it a chewy feeling. The gluten that is removed, feels sticky and has the texture of that of a Chewing Gum. Gluten may cause allergic reactions in people who are sensitive to foods that contain this protein.

How is Gluten Harmful

Gluten intolerance may often result in a disease known as Coeliac Disease. It is also known as Gluten Enteropathy. It is considered to be a hereditary disorder of the immune system which is a life-long disease. Ingesting gluten leads to irreversible damage of the lining of the small intestine. This basically results in weakening of the immune system since essential nutrients and vitamins are not absorbed. Given below are some harmful effects of gluten. Abdominal Bloating Abnormal Stools Calcium Metabolism Disturbance Constipation Flatulence Impaired Growth Intestinal Malabsorption Iron-Deficiency Anemia Muscle Wasting Offensive Stools and Subtle Cramps Poor Appetite or Irritability Poor Muscle Tone (Hypotonia) Recurrent Oral Ulcers Severe Weight Loss.

When on a gluten free diet and you eat gluten periodically what side effects can you expect?

symptoms vary for each person - the most common side effects are gastrointestinal symptoms, and/or a rash (also known as dermatitis herpetiformis or DH for short) - but it's important to remember gluten effects everyone differently. whether the person exhibits outward symptoms or not, there is still damage to the intestines when gluten is consumed.

What if you think you have celiac disease but tests come back negative?

If you've been having bad reactions to foods containing gluten, you may not have celiac disease, but rather, you could be gluten intolerant. The difference is that with celiac disease, you are so highly allergic to the gluten that it actually damages the tissue in the body, causing irreversible damage. With gluten intolerance, you are still "allergic" to gluten, but not to the degree of structural damage to the body. Instead you get side-effects such as bloating, pain, headaches, tiredness and fatigue, etc. My guess is that if you've had these (and probably other) side effects and you've had tests done to see if it is celiac disease, the fact that the tests have come back negative is a strong indication that you're most likely gluten-intolerant. I have just been diagnosed with being gluten-intolerant and my daughter too!) myself, and we have been able to avoid all the side-effects and have had a lot of relief by no longer including gluten-containing products in my diet.
