Rabbits do not have a third eye... they have an extra eye lid that is seen occasionally when a rabbit is sick.
The strange thing is that they are born without fur and their eyes and ears are closed. They are also all pink!
Most Rabbits have brown eyes. Albino rabbits have red eyes and there are even some rabbits with blue eyes.

Any breed of any animal can have white fur/skin and red eyes. A rabbit with red eyes and white fur is known to be an Albino rabbit. Albinism is common in rats as well. It can also happen to people (not so much the red eyes). there are black albino people which have white skin, even though their entire family is black.
If they exist, some might have pink eyes.

The ears aren't truly pink, they generally are just a lighter shade of the same colour as the rest of the rabbit's skin. However, the flesh on a rabbit's ears is very thin and they are more lightly furred. So when light passes through the capillaries carrying blood through the ears, it can give the appearance of a pink tinge. This is especially so on lighter colored animals such as white rabbits.
