Since amylase is found in our saliva, the pancreas has to add it again because when we eat starch we need it to break down into maltose, and when it is broken down, we swallow and let the maltase from the small intestine break it down more so it turns into glucose molecules, making it easier to digest.

What make and releases a chemical that breaks down starchy foods?

That chemical reaction is called as 'Hydrolysis'. So one water molecule is added to break one bond between the two glucose molecule. The one molecule of carbohydrate may contain thousands of glucose molecules. That will need thousands of water molecules to get thousands of glucose molecules. You have the enzyme called as amylase to break the bond. You need alkaline pH for action of this enzyme. This enzyme is secreted by your pancreas.

Why should the amylase in the saliva be replaced with carbohydrase in the small intestine?

Amylase found in saliva breaks down carbohydrates into simple sugars, but it needs an acidic pH to work optimally. In the small intestine, carbohydrase enzymes like maltase, sucrase, and lactase are better suited for breaking down carbohydrates in a neutral pH environment. This helps ensure efficient digestion and absorption of carbohydrates in the small intestine.
