If the groom refuses to get involved then have the bride and her mother. Usually all the groom's parents have to pay for is the alcohol and may be kind enough to also pick up the catering bill. Get your percentage fee up-front IMMEDIATELY so you are covered for any expenses needed and collect the rest at the end of the reception. Usually the job of paying the bills to the wedding consultant is up to the Best Man, but also the father of the bride (with exception of the bar bill.) Be sure you tack on 1/2 hour for each traditional event in case of problems occurring (example: the bride is nervous and holding up the ceremony, or, the photographer is taking too long to take pictures. ALWAYS be sure any photographer gets the pictures done and does not pester the bride and groom and take them away from their guests and their own fun for too long. I've seen more photographers ruin a perfectly good wedding. Be sure you get names on the contract or contracts for what menu the bride has chosen, what alcohol is to be served and if they are only paying for 2 drinks for each person or the whole bar bill. Get a contract signed as well for EVERYTHING you do and especially the items on the menu the bride and groom want served at their wedding. Signatures on contracts are worth their weight in gold and they can't argue about anything. This also goes for any flowers ordered by you.
