In the medieval towns and cities where I have lived, the dead were buried in the ground. This was England, and other countries probably had people who did things other ways, but I think it was usual for Christians in Europe of that time to bury the dead so they could be risen from the grave for the final resurrection.
I know some ancient pagans burned their dead, and parts of Europe were pagan through much of the Middle Ages.
