You may:

- have to put up with cultural differencies and claims. The Austrian Empire couldn't do it, the result was basically World War I!

- face revolutions, especially if you favor certain people.

- encounter fierce resistance, especially if you try to conquer an empire you don't know like the locals do. That's how the US lost in Viet-Nam, how the French lost Indochine and Algeria, etc.

- run out of money due to the wars you wage, or your court's spending...

- deal with people trying to overthrow you.

- face plagues, natural disasters, starvation wages...

- undergo sudden change, for instance if your subjects suddenly get converted to a new religion en masse and you don't follow, you're very likely to end up badly.

- fall into decadence and loss your empire's unity, that's how the Roman Empire fell.

The more your Empire is built upon isolated elements that made it strong, the more it's actually fragile. For instance Napoléon's Empire was only built upon this leader's military genius, just like the Mongolian Empire was built upon cavalry and some Khans' bravery. So, I wouldn't recommend you to start building one... ;-)
