The reasons I know of are because of religious persecution from penal laws in their own country, in addition to others. Also, Ireland was one of the poorest countries in Western Europe at the time, (because of interference from Great Britain). There was also a great famine at the time in Ireland. America was seen as the land of opportunity for many at the time, ( not just the Irish). I would probably give out more info on this topic but my sister needs to get on this computer and my computer is having trouble. I'm primarily Irish, Scottish, and British; I'm proud to be so too. I somewhat quoted some of this info from wikipedia so I'm not sure how accurate some of this is. I hope I completely answered your question.
The Irish Famine was the reason. Back then Ireland depended on the potato for food and then all of them got diseased with blight which made them deadly to eat. As well as 1.5 million emigrating around the same amount of people died of starvation.
The fertile farm land was the original reason that settlers were attracted to the South. The warmer weather was another reason they wanted to go to the South.
Do some research on "Ellis Island" which is the place in New York where many Irish first arrived in America.

The migration of many settlers to Texas was primarily driven by the promise of land and economic opportunity. The Mexican government encouraged American settlers to move there in the early 19th century to help develop the region, offering land grants and inviting those seeking a fresh start. Additionally, the allure of fertile land for agriculture and the prospect of escaping various issues in the United States, such as economic hardship and overcrowding, motivated many to make the journey. This influx of settlers ultimately contributed to tensions between them and the Mexican government, leading to the Texas Revolution.
