Land was expensive in medieval towns, so houses tended to be two or more stories tall. Wealthy people had their own, nice houses, but poor people tended to live in rented rooms and apartments. Houses were usually made of timbered construction, and were very quaint to the modern eye.
The Medieval era spanned a millennia and many monks lived during that time- there's not going to be any definitive answer. What I can tell you is that common building materials included wood, mud brick, stone, and rushes and that monks' houses were probably built to the method of whichever era they lived in.

near by houses in the village.
Most probably did. Some were built of stone, without framing, and some were log cabins. Medieval wattle and daub houses had timber frames, as did the other half timbered houses, cruck houses, and so on. There were brick houses in the Middle Ages, but I don't know anything about how they were built.
Probably the must numerous medieval buildings we see today are churches and houses, built for ordinary people. There are a lot of monastic buildings around, but most are in ruins. There are castles, built for kings and members of the nobility. There are palaces built to be homes for kings and bishops, and manor houses built as homes for nobility. Some merchant buildings and guild halls also exist, built for commerce. There are even a few barns, built to store the grain. There are inns, presumably built for innkeepers to run their businesses. There are others as well.

In the UK, houses built in the 1980s were fairly similar to houses built in the 1970s and those built now. Very recent houses tend to be smaller.
