Stabs and shots unfortunately would separate the rings and pierce through. Later Medieval arming swords had finer thrusting points, specifically to thrust through gaps in plate armour, and pierce easily through chainmail underneath it or chainmail on the body instead of it. You can buy chainmail armour from villagers and you can also kill zombie with chainmail armour on them but its a rare drop so don't get excited thinking you will find one. You can also find chainmail armour in the creative inventory. With mods and TMI (Too Many Items) you can craft them the same way as other armors but with "Fire" instead. That's cheating, though. :)

Absolutely. 4 way interlinked iron chain links making a shirt easily deflects most edged or pointed weapons with only minor bruising. You usually need to wear good leather armor under the chainmail to reduce the bruising. It is just very tedious and expensive to have a blacksmith make quality small but strong link chainmail for you.
