There were several factors to this answer, some with more impact than others but here goes:

Stalingrad was named after Josef Stalin, current political leader of the USSR, and thus was seen as an icon of hope, therefore many were willing to fight long and hard for it.

Supply lines were stretched thin this far away from Germany, and with the poor conditions of roads, this made it even worst and soldiers were fighting under-supplied

Once again Russia shines in several key factors, primarily they outnumbered Germany many times over and while many of these people were peasants with no combat experience, or even weapons whatsoever soviet Propaganda drove them on

Russia shines yet a 3rd time as Soviet snipers time after time again devastate German chain of command and morale by taking out officers and other soldiers from afar, some of Russia's finest were recorded with having over 500 confirmed kills
