There are three main reasons:

Salutary Neglect: The early American pioneers and often left Europe because of economic, religious and political persecution and once they had settled and inhabited the Americas, they felt that the remote British government was no longer relevant or responsive to their needs. They had developed numerous independent or quasi-independent institutions to take the role that the colonists would have ordinarily paid taxes over.

Taxation without Representation: The colonists did not want to pay taxes because they were not represented by Parliament and had no say so in the making of laws. They developed a concept that taxation should be commensurate with democratic representation and therefore withheld their taxes and rebelled. They believed it was unfair for them to pay taxes with out representation. Hence the saying "No taxation without representation."

Lack of Desire: This should be relatively obvious, but NOBODY likes paying taxes. People usually advocate for themselves to pay fewer taxes. Therefore when the British government imposed more taxes on the Thirteen American Colonies, even though they were much lower than taxes in other parts of the British Empire, Americans rebelled.
