Nobody flicked a switch and suddenly proclaimed the medieval era had begun - the transition was really quite blurred.
Historians take the end of the ancient Roman Empire as marking the end of ancient history, but in fact the Roman Empire simply fragmented rather than ending on a prticular date. In English history, the abandoning of the province of Britannia by the Romans in 410 AD (the early 5th century) is considered the final date of the area's ancient history., followed immediately by the Saxon/Viking era (or the very early medieval period - there is no absolute agreement on this).
500 is simply a nice tidy round number, but it doesn't really tie in with historical fact.
Similarly there is no definitive date for the end of the medieval period - 1500 is equally tidy, but many people choose an earlier or later date.
