we celebrate mexicos independence day because they are in the same continent as us and we deal with them alot more after tthey became independent.
Its national birthday, was July 4, 1776. Americans celebrate it as July 4, 1776 but that was only when the Declaration of Independence was signed. However the war went on for many more years and America really gained Independence in 1783. so technically 234 years but literally 227 years.

Many countries celebrate their own Independence days. In Mexico they celebrate Cinco de Mayo, which is on may fifth. However most countries do not celebrate the independence days of other countries because of lack of relevance to their own lives. In the U.S.A we celebrate Cinco de Mayo, but more as another day to drink irresponsibly. this practice was Incorporated by various beer and liquor companies as a marketing tool to boost sales.
We celebrate New Years Eve because it is a new year and because you get more time with family and friends.
On July 4th, 1863, the city of Vicksburg surrendered to the Union forces of General Grant. A bloody siege preceded the surrender, many residents had perished from hunger, disease and union guns. Consequently, bitter memories kept away any celebrations until the end of the second world war...

Ireland does not celebrate an Independence Day, however its Independence Day is April 24th, after the Proclamation of the Irish Republic commencing the Easter Rising on April 24, 1916. it is more easier to explain that this was the day Ireland declared independace but this was not the day they got it.
