What satay simply is, is skewers of grilled chicken, pork or beef marinaded and dipped in a sweet sauce. Kind of like "pinchos" from Puerto Rico. Satay is a Malaysian/Indonesian style kabobs. Satay varies all over Southeast Asia. "Indonesian satay" can simply refer to the satay eaten in Indonesia, and there is not much differences between the satay eaten in Malaysia, Thailand or Philippines. Since Malaysia and Indonesia are Muslim countries, they don't use pork for satay in those countries. They only use beef, chicken and seafoods.
