I work at a Japense Streak House in Oklahoma City, OK. I ran across the quesiton while seaching for something similar on the internet and felt bad that it still was in need of an answer. Typically our head wait is responsible for training new wait staff, assigning opening sever duties and checking to make sure opening duties are complete. This person is also expected to make sure servers are performing their duties to the best of their ability and assisting them in making up any short comings such as refilling drinks, pre-bussing tables, running orders to a table, etc. At the end of the night, this head wait also much assign closing duties, how many napkins servers are responsible for rolling and checking to see that these closing duties are accomplished. Typically our head wait isn't expected to assist the management team with decision making process, but she/he is expected to help us inform and enforce any changes with the rest of the wait staff. If any problems or communication complications occur between wait staff and customers or wait staff and other staff, head wait should be expected to help assist the situation in a positive and professional way.
