Most colleges require bachelor's degree candidates to take some kind of history/philosophy/political science course (often two), some kind of English course (often two), some kind of communication or arts course, some kind of science course (often two), and some kind of math course.
You usually get to pick which sciences you study from a list of four or so, so if you share my opinion that a Freshman-level course in environmental science is likely to be slightly less interesting as watching paint dry, then you can go straight for the good stuff (chemistry and physics, i.e. the actual sciences, as opposed to stamp collecting).

It depends on what the 'distribution credits' or 'core curriculum' requirements for your college are. You will probably have to complete a science distribution. This could be filled by a number of subjects besides biology(chemistry, physics, geology, psychology, astronomy etc.)

There are several companies that produce practice tests. Use those questions to guide your reading--whatever you don't know, look it up. A college text book in Environmental Science would also be helpful, since AP is a test for that course.
