Because a horses stomach is only as big as a rugby ball. If you fed it once everyday then it will get colic (stomach ache) , which can kill your horse, because the food won't be able to fit. Whereas if you feed your horse in small amounts then it will be able to empty its stomach and allow more food in.

It depends on where your feet hit the horse. When riding a horse, your legs should not go further down then their stomach. the longest you could go is just at the bottom of their belly.

the horse chooses you just as much as you choose the horse... and remember your feet shouldn't hang over the stomach of the horse. that means that the horse is too small for you. Also, depending on how good you ride, choosing a gentle, or compettitive horse will make a VERRY big difference.. make sure you give your new horse lots of TLC!!
