I prefer serrated knives to santoku knives for slicing meat. They are much easier to use and handle in my opnion.

Magnetic knife strips can be better than wood blocks for storing knives because they help keep the knife in place. Turning the container upside-down will not cause the knives to fall out as they would in a wooden block container.
