The answer is.. it depends. If any animal is hit by a car and killed on impact, they might be salvaged as long as the internal organs, especially the stomach, intestines, and bladder aren't ruptured (which would taint the meat). If the animal is killed by impact to the head or from collapsed lungs, it should be harvested as quickly as possible to ensure the highest quality of meat from the animal.
I would give that a "probably not", but I'm no deer expert. Road kill just doesn't seem the most sanitary.
