The best vegetables for Mini Rex rabbits - and all pet rabbits - are dark leafy greens. All other vegetables and fruits are only okay as a treat (a bite or two is enough!).
Some good leafy greens to feed your Mini Rex:
Always introduce new foods to your bunny carefully. A sudden change in diet can make a rabbit sick! Also, individual rabbits can have bad responses to foods that are fine for rabbits in general. So, stick with one new food at a time - wait a week or so before the next new food. Start with only a bite or two on the first day, then slowly increase the portion size. Watch for signs of ill health like gas or diarrhoea.
Many rabbits also enjoy crucifers, but these greens can lead to gas. Gas can be serious, even deadly, in rabbits. If your rabbit is okay with these greens in moderation, that's fine; but if your rabbit is sensitive to gassy foods, then avoid them.
Other fruits and vegetables are good as treats (a bite or two per day, tops). Too many treats can make your bunny sick. Some options for treats include:
