I would say a rottweiler is more aloof with strangers but a presa is more teretorial and protective of his proparty but it realy depends on the dog as an indavidual
the max size of a amstaff is around 60 cm but to get it to its biggest size it should have big parents if the breeds generations are know to be around 57 60 cm it is most likely for the dog to be around that size as well and visa-versa if it has shorter dog in the family it is most likely to be shorter than the others
